How many short stories can you really write about your cat?

The story isn't about Charlie, my cat, exactly... but he's in it.  I think I forgot how good it feels to finish a story.  It was just a 500 word story but I forgot what a high it can be. It's really different than working on a novel, I really need to mix it up more often. Another bit of great advice from my imaginary mentor Neil Gaiman.  I read his blog a lot.

So the only thing I've actually completed on my last post is number 3. Sort of. its a new story...
It's been a while since I've posted.  This is something I work on when my husband is at work or busy but he's been having a lot of 3 and 4 day weekends.  I've cooked a few things that i will be posting with in the next couple of days but here's a couple I've been meaning to post.

Despite not being able to get a good picture of this one it must be shared due to is deliciousness. It's one of my best go to easy awesome recipe. Modifications on my version here. Original link provided.

Turkey and Quinoa Meatloaf

  • 1/4 cup quinoa

  • 1/2 cup water

  • 1 teaspoon olive oil

  • 1 small onion, chopped (or shredded if you dislike the oniony texture)

  • 1 large clove garlic, chopped (i used minced)

  • 1 lb ground turkey

  • 1 tablespoon lime juice

  • 2 tablespoons soy sauce

  • 2 eggs

  • 1 1/2 teaspoons salt (optional)

  • 2 tablespoons brown sugar

  • 1 teaspoon soy sauce

  • 1 teaspoon lime juice


    1. Bring the quinoa and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Set aside to cool.
    2. Preheat an oven to 350 degrees F (175 degrees C).
    3. Heat the olive oil in a skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the garlic and cook for another minute; remove from heat to cool. (don't skip this step, found that out the hard way)
    4. Stir the turkey, cooked quinoa, onions, lime juice, soy sauce, eggs, and salt in a large bowl until well combined. The mixture will be very moist. Shape into a loaf on a foil lined baking sheet. Combine the brown sugar, 1 teaspoon soy sauce, and 1 teaspoon lime juice in a small bowl. Drizzle the paste over the top of the meatloaf.
    5. Bake in the preheated oven until no longer pink in the center, about 50 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let the meatloaf cool for 10 minutes before slicing and serving.
    Savory Onion Bread
  • 1 1/2 cups all-purpose flour

  • 3 teaspoons baking powder

  • 1 teaspoon salt

  • 2 tablespoons margarine

  • 1/2 cup shredded sharp Cheddar cheese

  • 1/2 cup finely diced onion

  • 1 tablespoon margarine

  • 1 egg

  • 1/2 cup milk

  • 1/2 cup shredded sharp Cheddar cheese

  • Preheat oven to 400 degrees F (205 degrees C). Grease one 8 inch round or one 8x8 inch square pan.
    (I used my regular bread pan)

    1. Combine flour, baking powder and salt, cut in 2 tablespoons of the butter until mixture is crumbly. Stir in 1/2 cup of the grated cheese. Make a well in the center of the mixture.
    2. Fry the onion in 1 tablespoon of the butter or margarine until clear and golden. Set aside.
    3. In a small bowl beat the egg and stir in the milk and the cooked onion. Pour egg mixture into the well in the flour mixture. Stir until just moistened. You will have a soft dough. Pat dough into the prepared pan. Sprinkle remaining 1/2 cup grated cheese over top.
    4. Bake for 25 minutes. Serve hot.
